Grilled Eggplant


Grilled eggplant sells in my local deli for around $20 a kilo, but I can buy it fresh for $4.50 a kilo at the moment. There’s a million different ways to do this but for now I’ll tell you the simple way.

1. Cut off the top and bottom of the eggplant and cut into 1/4 inch slices.

2. Sprinkle both sides generously with salt and let it sit for 30-60 mins.

3. Rinse in cold water then dry on kitchen towel.

4. Brush both sides with Olive Oil (extra virgin is best)

5. Place onto preheated hot grill and cook until the dark lines appear and turn repeating on other side. (I used the bottom plate of my george foreman, but you can use your barbeque or a griddle pan)
6. Serve it up with other yummy salad stuff, or as part of a cheese platter, or use it in a sandwhich or a pizza topping or the options are endless !
