Easy Prawn Laksa

Laksa purists are going to hate me, but this is a quick and yummy little dish that doesnt take long to prepare and is a great little boost on a cold day. There are hundreds of different ways to make laksa and this one is as easy as it gets. You can choose to add various different herbs, spices and vegetables but I make this one cause it’s easy to have all the ingredients on hand in the cupboard and the freezer. This ingredients below will serve 2 but can easily be doubled, tripled, etc
Ingredients

200gm pack instant japanese noodles

4 tablespoons Laksa Paste

250 grams peeled green prawns (shrimp)

200mls coconut milk

1/2 cup stock (chicken or fish)

a few sprigs of coriander (for garnish)

Method

1. Prepare noodles as per packet instructions (I soak mine in boiling water until they easily seperate with a fork) Drain and divide into two bowls

2. Heat laksa paste in a medium sized saucepan, add prawns and stir until cooked.

3. Add coconut milk and stock to the saucepan and bring to the boil

4. Serve into two bowls and add a few leaves of coriander for garnish
