Roast Vegetables with no mess

Back here I wrote about the first time I ever tried to cook a roast.
Well I did it all again and it went just as well, I even remembered to make the gravy.
The other thing I did differently was used foil pie tins to cook the vegetables in. Instead of just drizzling the oil over the top like last time, I tossed the veggies in the oil and this stopped them sticking to the pan. It also gave the herbs something to stick to so they spread more evenly.
