Smoked Seafood Chowder Recipe (Cassandra Style)


2cups water
500gm smoked cod (or other fish)
4rashes bacon
onion
garlic
2medium potatoes
2 1/2cups milk
3T P Flour
Tin of crab meat or seafood extender or other seafood include prawns, scollops, mussels
2tsp lemon juice
can creamed corn
cup of rice

1. boil the smoked fish simmer 10mins…then drain keeping one cup as stock

2. flake fish and remove bones

3. cook onion bacon and garlic to soften, then add potato (partially cooked in microwave)

4. add the fish stock

5. mix flour with some milk to paste then add milk

6. simmer 20 mins then stir in seafood (including fish)

7. add rice and serve when the rice is cooked.
