Cheap and Easy Vego Bean Chilli

I’ve never liked baked beans or broad beans, and while I’m happy to eat string beans I’ve never really sought out beans for my cooking. I’m guessing it’s some sort of repressed child hood memory of being served up tinned baked beans on toast. I didn’t like it then and I don’t like them now.

1 tin diced tomatoes
1 tin four bean mix
1 small onion, diced
1-2 cloves of garlic, crushed, chopped etc
1 teaspoon of dried chilli seeds
1 teaspoon of cummin
1/2 teaspoon cayenne pepper
1 cup vegetable stock

Fry onion and garlic in a splash of olive oil until soft, reduce heat then add tomatoes and rinsed beans, then everything else, mixing well. ¬†Allow to simmer for 20 minutes then it’s ready to serve with rice or pasta or bread or just on its own.
